Jesse’s Seven Layer Dip (not pictured)

what you need…
2-3 avocados- peeled, pitted & diced
1 lime
1/4 Cup chopped cilantro
1/2-3/4 Cup of Salsa (homemade or store bought)
salt & pepper to taste
16oz of Sour Cream
2 (1 oz pkg) of Taco Seasoning Mix
2 ripe tomatoes, diced
1 bunch of green onions, finely chopped
1 (16oz) can of refried beans, or bean dip from the chip aisle
2 Cups of Mexican Style shredded cheese
1 sm can of chopped black olives, optional

what to do - 

In a medium sized bowl, mash the avocados. Mix in some lime juice, cilantro, salt & pepper
Blend the sour cream & taco seasoning mix together
In a 9×13 inch dish, spread the refried beans. Next, add the sour cream mixture. Spread on the guacamole mixture & add the salsa on top of that. Finish it off with the shredded cheese, tomatoes, green onions & black olives

 

Irma’s Artichoke Dip (not pictured) 

You can make this a day in advance, just don’t add the final layer of cheese and bread crumbs until you are ready to put in the oven.  Also – this is best served hot and cheesy, so if where you are going has an oven, use it and serve immediately to you hungry friends.  i promise you there will not be any left!!  xo

what you need:

2 cans/jars of artichokes in water

16-oz cream cheese  – softened

4 tbsp mayo

4 tsp lemon juice

1 1/2 tsp minced garlic

1 1/4 cup of fresh grated parmesan cheese

i cup of parmesan flavored bread crumbs

salt & pepper to taste

what to do –

in a big bowl, mix artichokes, cream cheese, mayo, lemon juice, salt & pepper, garlic, 3/4 cup of parm cheese and a sprinkle of the crumbs.  stir it all together. put it in a casserole dish.  cover with the rest of the parm cheese and the rest of the bread crumbs. bake in the oven for 30-35 minutes at 350-degrees. 

serve with chunks of bread, crackers or tortilla chips.

Newsman Dave’s French Onion Dip

(Old Wiley family recipe handed down from generation to generation)

you will need -

1 pack of McCormick French Onion Dip Mix

1 cup of sour cream

what to do -

Stir the sour cream and seasoning mix in small bowl until well blended. Cover and refrigerate at least 1 hour. Stir before serving. Serve with chips, crackers of fresh veggies.
